6 slices very soft, fresh white bread (crusts removed)

6 slices American cheese (such as Kraft singles)

butter for “toasting”

homemade marinara/spaghetti sauce (or your favorite store bought brand)

Using a sharp knife, carefully remove the crusts from the bread slices. Flatten each slice of bread with a rolling pin until very flat. Place a slice of American cheese on each of the flattened bread slices and roll each of these up into a tight roll. Moosh the edge of the bread to the roll to seal (you can use a couple drops of water to do this if needed.)

Heat a couple Tablespoons butter in a skillet over medium heat. Place the roll-ups in the butter once it’s barely sizzling. Using a spatula, roll the roll-ups around in the butter. Gently flip and roll until all sides are golden brown and cheese is melty.

Heat 1/4 cup of your favorite marinara/spaghetti sauce in a microwave-safe cup (covered with a napkin or paper towel) for about 30 seconds or until just warm.

Deviled Egg Spread

Ingredients

1 dozen large eggs
2 tablespoons white vinegar
1 cup mayonnaise
1 tablespoon yellow mustard (add more if you like)
Kosher salt and freshly ground pepper
bread, baguettes, or crackers
Paprika, for dusting

Instructions

In a large saucepan, cover the eggs with water, add the vinegar and bring to a rapid boil. Cover the saucepan and remove it from the heat; let stand for 15 minutes. Drain the eggs and cool them under cold running water, shaking the pan vigorously to crack the shells. Let the eggs cool in the water.
Once the eggs have cooled, shell the eggs and halve them lengthwise. Coarsely chop half of the egg whites and transfer them to a large bowl for later use. Add the remaining whites and all of the yolks to a food processor along with the mayonnaise and mustard and process until smooth. Scrape the mixture into a bowl and stir in the reserved chopped egg whites. Season with salt and pepper to taste. Transfer to your serving bowl and dust with paprika.
Serve with toasted bread, baguettes, or crackers.

Easy Homemade Glazed Doughnut Holes

Yield: About 2 dozen Prep Time: 20 min Cook Time: 5 min
Ingredients:

For the glaze:
1 1/2 cups confectioners' sugar
3 to 4 tablespoons whole milk
2 teaspoons vanilla extract

For the doughnut holes:
5 cups vegetable oil, for frying
1 cup milk
1 large egg
2 cups all-purpose flour
2 Tablespoons sugar
4 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup (1/2 stick) unsalted butter, melted

Equipment: Deep-fry thermometer; Small ice cream scoop

Directions:

Make the glaze:

Sift the confectioners' sugar into a medium bowl. Slowly stir in 3 tablespoons of milk and the vanilla extract until the mixture is smooth. If the glaze isn't thin enough, stir in 1 additional tablespoon of milk. Cover the glaze with plastic wrap and set it aside while you make the doughnut holes.

Make the doughnut holes:

Add the vegetable oil to a large, heavy-bottomed pot. (There should be at least 2 inches of oil in the pot and at least 2 inches between the top of the oil and the top of the pot.) Attach the deep-fry thermometer to the pot and begin heating the oil over medium heat to 350ºF. Line a baking sheet with paper towels.

In a small bowl, whisk together the milk and the egg.

In a separate medium bowl, whisk together the flour, sugar, baking powder and salt. Stir the milk-egg mixture into the dry ingredients, then stir in the melted butter, mixing until a soft dough forms.

Once the oil has reached 350ºF, use a small ice cream scoop to drop about 1 tablespoon scoops of dough into the oil, careful not to overcrowd the pan. Fry the doughnut holes, flipping them in the oil, for about 2 minutes or until they're golden brown. Using a slotted spoon, transfer the doughnut holes to the paper towel-lined baking sheet.

Allow the doughnut holes to cool slightly. Place a cooling rack atop a baking sheet, then one by one, dip the doughnut holes into the glaze and transfer them to the rack to allow the excess glaze to drip off. Serve immediately.

The dough expands when fried, so 1 tablespoon of batter will yield about a 2-inch doughnut hole. If you prefer smaller doughnut holes, drop about 1 teaspoon of batter into the oil. This recipe yields about 2 dozen of the larger doughnut holes or 4 dozen of the smaller variety.

1 prepared single pie crust (homemade or purchased, I used Pillsbury)
2 tablespoons butter, melted
1/2 cup pecans, chopped
1/3 cup brown sugar
1/4 cup corn syrup
2 eggs
1/2 teaspoon salt
Optional
1/4 cup semi sweet or milk chocolate chip for decorating
Instructions

Preheat oven to 400 degrees.
In a large non-stick pan, combine butter, pecans, brown sugar, corn syrup, salt and eggs. Cook on the stove top over medium-low heat just until thickened. (You don't want it dry, just slightly thickened, about the consistency of pudding). Remove from heat and set aside.
Unroll dough and using a 3" cookie cutter, cut out circles. Gently fold about 1/8-1/4" up on the edges.
Spoon 1 tablespoon of the pecan mixture into each circle.

Place on a parchment lined pan (it's important to line it) and bake 8 minutes or until filling is just set. Remove from oven and cool on a wire rack.
Place chocolate chips in a small Ziploc bag (use brand name, the store brands tend to leak). Microwave about 15 seconds or until mostly melted. Snip off a tiny corner of the baggie and drizzle chocolate over the cookies. Cool until set.
