2 med. baking potatoes, peeled and thinly sliced
3 med. onions, thinly sliced
1/2 c. skim milk
2 tbsp. snipped parsley
2 tbsp. pimento
2 oz. process Swiss cheese, shredded 1 1/2 cups

Layer half potatoes, half onions in greased baking dish. Sprinkle with pepper. Combine milk, pimiento and parsley. Pour half mixture over onion potato mixture. Repeat layers. Cover and bake at 350 degrees until vegetables are tender. Approximately 50 to 60 minutes. Uncover and sprinkle cheese on top. Return to oven until cheese melts

We have boudin made at Double D or I have gone south of Lafayette to a cajun meat market and buy it in bulk. I vacuum pack it for the freezer and it lasts a good long time.
