wash and slice eggplant to what thickness u like
put salt, cayenne, and pepper in zip lock with flour

mix a cup of ranch dressing and 1 egg dip eggplant in dressing then flour ,fry in a deep fryer till golden.. serve immediately with a dollop of salas on top, these are good with any kind of meal, real good with mexican cusine..
