a 15 lb. (or so) turkey
1 stick of butter
enough peanut oil to fill your pot about 1/3 of the way
2 cups of Italian dressing
1 cup of seasonings (a mixture of cayenne, black pepper, onion powder, and garlic powder
Melt the butter and add the dressing to it the night before you cook the turkey.
Add the seasonings (make it however you want to) to the mixture.
Place this mixture into an injector needle. Insert the needle all the way into the turkey and squeeze. Inject the turkey all over, and at multiple angles, until you use all of it.
Place the injected turkey into a bag and keep in the the refrigerator overnight. This will allow the seasonings to soak the entire turkey.
On the day that you are going to cook the cajun fried turkey, heat the oil to about 375 degrees F. This should take about 30 minutes or so.
Place the turkey into the heated oil. This should drop the temperature to around 300 to 350 degrees. Never let it rise to above 350 degrees F.
Cook the cajun fried turkey for about 3 minutes per pound (about 45 minutes for a 15 lb. turkey).
Do not place the lid on the pot!
