CHEESE - TUNA MELTS (SANDWICH)
6 slices French bread
6 1/2 oz. can tuna, drained
3 oz. cream cheese, softened
2 tbsp. mayonnaise
2 tsp. lemon juice
1 c. shredded cheddar cheese
Heat broiler. Lightly brown sides of bread in broiler and then remove from broiler. Heat oven to 350 degrees. Combine tuna, cream cheese, mayonnaise and lemon juice. Divide tuna mixture evenly on each slice of bread. Top with cheese and bake 10 minutes until cheese is melted. Serve.
These are a breeze to make for a light summer lunch. Serve with cold kosher dill spears, or a tray of veggies, fresh brewed sun tea tops off the meal.
