Deep-fried jambalaya takes crown at Texas State Fair
The fried treat takes home the 'Golden Goody' award

. At Texas fair, fried 'is good'
NBCDFW.com
updated 1 hour 45 minutes ago 2012-09-In the early-morning hours on Labor Day, judges taste-tested eight delectable dishes, described from a State Fair press release below, but only one could be crowned the champ. This year, the honor goes to Abel Gonzales, the creator of deep-fried jambalaya.

Fried Oreos have nothing on these new inventions by the deep-frying wizards that entered the Big Tex Choice Awards at the State Fair of Texas.

Read the original story on NBCDFW.com.

Chicken fried cactus bites: Fairgoers will stick with these hand-picked prickly pear cactus pads, thinly sliced, chicken battered and deep fried to perfection. Served with a combination of sweet & spicy secret jalapeno ranch, and agave nectar dipping sauce.

..Deep-fried divine chocolate tres leches cake: A slice of chocolate tres leches cake soaked in buttermilk catter, and fried to perfection. A light sprinkle of cinnamon, topped with whipped cream, fresh strawberry slices and peaches are drizzled with a yummy syrup.

Deep-fried jambalaya: A state fair spin is given to this Cajun classic. This "from scratch" jambalaya is created using shrimp, cajun sausage and seasonings, then coated in lightly seasoned flour and fried to a golden perfection. This deep-fried Southern delectable will be served with a side of "made in house" spicy ranch sauce.

Jerk tofu and walleye rolls? Yes, healthy state fair food does exist

Deep-fried mac-n-cheese slider: This three-cheese mac is baked until golden brown, battered in bread crumbs, deep-fried until crisp on the outside, warm and gooey on the inside. Placed on a slider bun with a griddled beef patty, this southern-style invention almost calls for a rocking chair and a front porch.

Fried bacon cinnamon roll: Deliciously fresh cinnamon roll dipped in a special sweet pancake batter, rolled in crispy fried bacon crumbles, deep fried and sprinkled with powdered sugar. It’s a main course and a dessert all in one.

Fried Mexican fire crackers: A yummy, spicy chicken, cheese and jalapeno mix wrapped in fresh-made masa dough and deep fried to a crispy, crunchy, explosion of flavor. OLE, JOSE! Served with fiery TNT sauce.

Fried pork wing: This juicy morsel (made from hm shanks) is slow cooked for six hours then lightly deep fried, rolled and tossed in a smoked bacon chipotle glaze. Accompanied by old-school homemade potato chips lightly dusted in barbecue seasoning, it’s a sure crowd pleaser.

Picnic on a stick : Pieces of delicious spicy fried chicken alternate tater tots and slices of dill pickle. Repeated three times on a stick then dipped in batter, rolled in bread crumbs, and fried until golden brown, this picnic wouldn’t be complete without its choice of BBQ sauce, ranch, or honey mustard. BYO ants.

Big Mac copycat

For the sauce:1/3 cup low-fat mayonnaise 2 teaspoons dill pickle relish 2 teaspoons ketchup 2 teaspoons sugar 2 teaspoons yellow mustard 1 tablespoon plus 1 teaspoon finely chopped white onion For the burger:3 ounces 96-percent lean ground beef (about 1/3 cup) 2 pinches of salt 1 sesame seed hamburger bun plus 1 bun bottom 1 slice 2-percent milk yellow American cheese 2 tablespoons plus 1 teaspoon McDonald's Big Mac Sauce 1 teaspoon finely chopped white onion 1/3 cup shredded iceberg lettuce 2 rounds dill pickle DIRECTIONS
For the sauce:
In a small bowl, combine the mayonnaise, relish, ketchup, sugar, and mustard. Stir to blend well. Cover and refrigerate for up to 1 month. Stir in the onion just before serving.

For the burger:
Divide the beef in half. On a sheet of waxed paper, shape each half into a 4-inch patty. Season both sides with the salt. Transfer the waxed paper to a plate. Place, uncovered, in the freezer for 5 minutes.

Preheat a large nonstick skillet over medium-high heat until drops of water sizzle when splashed on the pan. Place the patties in the pan. Cook until no longer pink, 1-2 minutes per side.

Meanwhile, place the bun top and bottoms, cut sides down, in the pan. Cook until toasted, about 1 minute. (If the pan is not large enough to hold the patties and the buns, first cook one of the patties with the bottom bun and then start assembling the sandwich while the others cook.) Just before the patties are cooked, place the cheese on one of the patties.

Place one of the bun bottoms on a plate. Spread on 1 tablespoon of the sauce. Place the cheeseburger, cheese side down, on the bun. Spread 1 teaspoon of the sauce on the second bun bottom and place, sauce side down, on the cheeseburger. Top with the remaining sauce, the onion, lettuce, pickles, the remaining burger, and the bun top.

Making Boiled Peanuts today, should be ready tomorrow afternoon sometime.

The recipe is a easy one that I do, just boil some raw green peanuts in salted water all day long, and then let them soak overnight, then in the morning boil them some more. I guess total hours of boiling equals anywhere around 12 hours, but the soaking time they don't need to boil just set. So the total time involved is around 24 hours. I love all kinds of boiled peanuts, spicy cajun is great, read that recipe here:

1/4 pound ground chuck 1/4 pound ground beef Salt and pepper, to taste 4 tablespoons butter 1 cup finely diced onions 6 dill pickle slices 6 square dinner rolls

In a medium sized bowl, mixed together the beef and chuck, carefully so that you do not overmix the meat. On a clean surface or a cutting board, lay out 1 sheet of parchment paper. Place the beef in the center and top with another sheet of parchment paper. Roll out the beef until very thin, about ¼-inch thick, into a rough rectangle that is about 7-by-10-inches. Trim the edges of the square and use the scraps to pat into a neat rectangle that is 6-by-9-inches.

Season the hamburger square generously with salt and pepper. Using a spatula, cut six 3-by-3-inch patties out of the square. Using a straw, poke 5 holes in each patty, one near each corner and one in the center.

In a 12-inch skillet, melt the butter. Add the diced onion, season lightly with salt, and sauté in the butter for 1-2 minutes until it begins to sweat. Spread the onions evenly along the bottom of the pan so that the bottom of the pan is covered. Turn the heat to medium-low, and top the bed of onions with the patties, 4 at a time, seasoning side down. Allow the onions to "steam" the patties. Cover and cook the patties until they are no longer pink and cooked through, about 4 minutes.

Meanwhile, dampen a kitchen towel and wrap the 6 buns in it. Place in the microwave for 10-20 seconds to steam the buns.

To assemble the burgers, take each patty with no more than 1 tablespoon of the cooked onions and place on the bottom ½ of the bun, onion side up. Top with 1 pickle slice and the top ½ of the bun. Serve with ketchup, if desired.

Peanut oil, for frying
4 lb. chicken wings (about 40), separated into 2 pieces, wing tips removed, rinsed
12 tbsp. margarine
1 cup hot sauce, preferably Frank's Red Hot Original Cayenne Pepper Sauce ( other brands will work I use Cajun Sunshine )
1 ⅓ cups chunky blue cheese dressing ( I also offer Ranch and French for the girls )
4 ribs celery, halved lengthwise, then cut crosswise into 3″ sticks

1. Heat oven to 200°. Pour oil to a depth of 2″ in a 6-qt. Dutch oven, and heat over medium heat until a deep-fry thermometer reads 350°. Dry wings thoroughly with paper towels, and working in batches, fry wings until golden brown, about 12 minutes. Transfer wings to a wire rack set over a baking sheet, and place in oven to keep warm until all wings are fried.

Honey-Breaded Chicken Tenders

2 cups Italian breadcrumbs
3 eggs
1 tablespoon water
1 package chicken tenders
3 tablespoons honey

Preheat oven to 375 F.
Line a cookie sheet with aluminum foil.
Put the breadcrumbs in a bowl and set aside.
Crack the eggs into a small bowl. Add the water. Beat with a whisk or a fork until the yolks are broken and mixed with the whites.
Dip the chicken tenders into the egg wash, making sure each piece is thoroughly coated. Let excess egg drip off
Roll each chicken tender in the breadcrumbs, making sure each piece is covered on both sides.
Place the breaded chicken tenders on the cookie sheet.
Drizzle the honey over the breaded chicken tenders.
Bake for 20 minutes, or until crispy on the outside and the meat is white and juices run clear.

These are easy and delicious, they passed my taste test with teenage girls with flying colors this weekend.
