Hard boiled eggs--12-18
Liquid Crab Boil -1/4 cup per gallon jar
Vinegar--white works the best
Water
Red pepper
Black pepper
Beet juice for coloring
Remove shells and rinse eggs under cold water and place in gallon jar. Do not over-crowd. Pour vinegar and crab boil over eggs to fill jar ¾ full and finish filling with water. Pour the vinegar , crab boil and water mixture into a saucepan and bring to a boil. Pour vinegar , crab boil and water mixture back over eggs in jar. Add black and red pepper to suit your taste. Pour in 1/4 cup beet juice. Cover tightly and place in refrigerator to chill. These pickled eggs will keep indefinitely. Those who like salt may put 2 teaspoons to a gallon of pickled eggs.
For those who like pickled garlic , this is a great way to have both, just peal the garlic toes and drop into the bottom of the eggs.
