Hog Head Cheese
2 tablespoons vegetable oil
3 pounds pork shoulder, trimmed and cubed
2 cups chopped onion
1 cup chopped green bell pepper
1/2 cup chopped celery
2 tablespoons minced garlic
2 tablespoons dried parsley
2 teaspoons dried basil
1 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons Cajun seasoning
3 cups water or pork stock
3 (.25 ounce) envelopes unflavored gelatin
1 cup boiling water
1.Heat the oil in a 4 quart pot over medium-high heat. Add the pork roast, and brown on all sides. Reduce heat to medium, and add the onion, bell pepper, celery, and garlic. Season with garlic, parsley, basil, salt, pepper, and Cajun seasoning. Pour in 3 cups of water or pork stock, and bring to a boil.
2.Cover, and simmer over medium heat for 2 hours, stirring vigorously every 15 minutes. When the pork is ready, it should be completely shredded and reduced to a stringy consistency.
3.Dissolve the gelatin in 1 cup of boiling water, then stir into the pork mixture very well. Pour into a mold or casserole dish, and chill until set, about 8 hours.
4.To unmold, dip the bottom of the mold in hot tap water for about 1 minute, then invert onto a serving tray. Serve with your favorite crackers.
If you use chicken use the equal amount as you would for pork, I also add cayanne pepper to spice mine up, I cut the meat into very small pieces also. I make mine in non-stick loaf pans, this stores well in the fridge too.

French onion soup casserole
2-3 Tbs butter or margarine
3 large sweet onions or 4 medium white or yellow onions
2 c. shredded Swiss cheese (8 oz.)
1 can cream of chicken soup, undiluted**
2/3 c. milk
1 tsp. soy sauce
8 or so slices of French bread
**You can substitute cream of mushroom soup for cream of chicken to make vegetarian.
Slice onions and try not to cry. With this many onions, its hard.
Melt butter in a saute pan over medium heat, and add onions. Saute onions until clear, a little brown is ok. In a shallow 2 qt. casserole pan, layer onions, 2/3 of cheese and pepper to taste.

In a sauce pan, heat soup, milk, and soy sauce, stirring to blend. Pour soup mixture in a casserole and stir gently to mix. Top with bread slices. Bake at 350 uncovered for 15 minutes. After 15 minutes, top of bread should be nice and toasted.
Push bread slices under the sauce and top with the remaining cheese
Place casserole back in oven and finish baking for 15 more minutes.
Total prep time: 20 minutes.
Total baking time: 30 minutes.
Quick, simple and delicious!

Stuffed portabella mushrooms
4 large portabella washed
saute 1/2lb fresh crab meat in 1/2 tsp. olive oil, seasoned with onion, garlic and Tony's
after crab is well heated , add shredded cheddar cheese, mozzarella and parmesan cheese about 3/4 cups each, mix untill cheese is melted, gill side up pile the mixture into each mushroom (remove stem if there is one ) place in baking dish in 350 oven and cook about 20-25 minutes untill mushroom is soft.
You can use shrimp also in this but I prefer fresh crab.

Sounds good! I made spaghetti with garlic bread tonight, one of my fav things to make. I made plenty so there will be a lot for leftovers the next few day. Wish I had some of those chocolate chip cookies thou.

Bake 6-10 Minutes *Make sure the sauerkraut is drained really well so that your pizza isn't soggy!*

CAJUN STYLE LASAGNA
Ingredients: 8 cooked lasagna noodles 1lb. crawfish tails 1lb. uncooked small-medium Louisiana shrimp 16oz. ricotta 2c. shredded pepper jack 2c. shredded parmesan 8oz. velveeta 1lg. egg 1lg. bell pepper, diced 1sm. Onion, diced 4 garlic cloves 1sm. Jalapeno minced, remove seeds Olive oil 1sm. Tomato, diced Instructions: 9x9 casserole dish Preheat oven to 350° Saute in olive oil, bell pepper, onion, garlic, and jalapeno. Melt in Velveeta and 1/2 c. pepperjack Add Shrimp, Crawfish, tomatoes. Cook the shrimp half way done, slightly transparent. (prevents over cooking when it bakes) Season with an even coat of Tony’s, and pinch of cayenne. In mixing bowl, fold together ricotta, egg, 1/2 c. pepperjack, 1 c. parmesean, parsley, paprika, basil. Spray baking dish w/ non-stick spray Spread thin layer of Seafood Mix across bottom of pan. (this will keep the noodles from sticking) 1. Add a layer of noodles 2. Tonight 's supper >>Portabella mushroom's stuffed with crab,spinach and Parmesan, and Baked, with sauteed ham,onions, and celery topping,corn on the cob,Italian green beans,with bacon. Yummy good.
